Quinoa Taco Casserole 

We were looking for a tasty, healthy recipe and I stumbled upon a 21 day fix friendly taco bake recipe and am happy to report…it’s delish! 


Here’s my modified version:

Preheat oven to 350F

INGREDIENTS

  • 1 c. Quinoa, cook according to package
  • 1 lb. lean ground turkey, or beef (we used grass fed beef)
  • 1 cup chopped bell pepper, finely chopped 
  • 1/4 cup onion, finally chopped
  • taco seasoning (1 packet)
  • 16 oz crushed tomatoes
  • 1 & 1/3 cups shredded cheese 

DIRECTIONS

Cook the quinoa & set aside.  Brown the meat, adding seasoning per seasoning directions. Add the chopped veggies & tomato sauce to the mixture. Bring to low boil then simmer for a few minutes. Add cooked quinoa & 1 cup of the cheese mix and spread in a 9×13 pan. Top with remaining 1/3 cup of cheese, cover with foil and cook for 20 min. Remove foil and cook another 10 min. 

Let cool in pan for several min. before serving. 

21 Day Fix containers (1/4 pan = 1 serving)

  • 1 yellow
  • 1 red
  • 1/2 green
  • 1 blue

We loved this! Next time we’ll double or triple the recipe and freeze some! Perfect with a salad on the side!

Okay, so what exactly does this mean, some of you have asked…


Let me back up a minute and give you some behind the scenes perspective. My interest in health and fitness lies in Health Psychology. In fact, that’s what my masters degree is in.

What the heck does that even mean?

It’s essentially putting all the pieces together when it comes to health, rather than trying to understand how this whole thing works by looking at one small part of a person’s life. It’s about preventing chronic disease and health issues through living well in body, mind and spirit. It is about having balance in the every day. It is about treating the problem, rather than symptoms, when they occur.

We weave a pretty tangled web in our every day lives with stress, lack of sleep, distraction, processed foods, toxic environments, lack of activity… and we then wonder why there are so many life threatening diseases and major mental health issues bubbling to the surface.

So there’s that. I could go on and on..but you get the picture.

I like to inspire people to look beneath the surface, understand this crazy tangled web and take control! However, I don’t like to see people struggle by going too far to the extreme and then feeling defeated. I want people to understand how huge it is that health has to be a LIFESTYLE rather than major restrictions or changes that don’t stick.


So that’s where I’m coming from. Now for the box…

I personally love to surround myself with things that inspire me and motivate me. I encourage clients to do the same. It’s a matter of setting ourselves up for success by creating an encouraging environment for ourselves and removing things that will cause us to stray from the direction we really want to be going. In doing this I like to have FUN, enjoy this healthy lifestyle and make it something I LOVE rather than feeling like I’m constantly deprived!

That’s what the box is about. I want to inspire others toward a more vibrant, healthy life.

Each box will contain:

  • Healthy, yummy snacks made from natural ingredients
  • Items that are fitness related and motivate us to move!
  • Inspirational items such as positive quotes, art, small books
  • Bath & body items, with natural ingredients
  • Stress relieving products
  • And just anything that I love and brings me joy!

I am so very excited to share this box not only for everything I just said, but also to shine the spotlight on businesses that are creating these awesome, inspiring things!! And…you will notice that A LOT of the stuff included in the boxes will be from the Pacific Northwest. I am PNW girl all the way! Born in California, raised in Oregon and I’ve lived several years in both Washington and Alaska. Home is now Oregon but I want to bring you things from all up and down the west coast! I feel blessed to live in such an amazing, beautiful place surrounded by mountains. <3

Crock Pot Chili — PALEO

My hubby and I are really loving this whole Paleo thing.  I am feeling amazing…more energy, lean, just plain healthy.  The more I research Paleo, the better I like it.  Particularly for things that I see so many people struggle with like hormone issues, issues stemming from inflammation and energy issues.

This recipe was a hit!  I was a little skeptical because
A) I HATE carrots!
and B) there are NO beans!
But, the flavor was so DELISH!  And who doesn’t like a super easy meal you can throw in the crock pot?!

INGREDIENTS

  • 1.5 pounds grass-fed beef
  • 1 green bell pepper, diced
  • 1/2 large onion, diced
  • 4 large carrots, shredded (you could chop small if you prefer)
  • 28 oz diced tomatoes (I used fire roasted)
  • 4oz diced green chilies (I used fire roasted…sensing a theme here? 🙂
  • 1/2 teaspoon sea salt
  • 1 teaspoon onion powder
  • 1 tablespoon chopped fresh parsley
  • 1 tablespoon Worcestershire sauce (I used A-1…yum!!!)
  • 4 teaspoons chili powder
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • Pinch of cumin

DIRECTIONS
  1. Cook beef on stove top and then add to crock pot…keep the fat too!!
  2. Add prepared green bell pepper, onion, carrots, tomatoes and green chilies.
  3. Stir all the ingredients well, then add the remaining spices and seasonings.
  4. Mix well, cover and cook on low for 8 hours or on high for 5 hours.
  5. Goes nicely with a grain free chip, small amount of good quality cheese (depends on if you do dairy with your paleo plan), sour cream, jalapenos…

Homemade Vanilla Coconut Coffee Creamer 

Coffee creamer is one of those things I have a very hard time not having. I LOVE the thought of getting up and having that first cup of coffee in the morning. There’s just something comforting and inviting about it. Anyone with me on this?

So, rather than give it up altogether, I like trying healthier ways of still having my coffee the way I like it, sweat and creamy.

Typically what I do instead of the regular flavored coffee creamer you buy at the store (hello salted caramel!) is just half & half & honey. It’s good! And people…I take my coffee seriously. When I say it’s good, I’m being genuine. 🙂

I thought I’d try something different however. I love the idea of making your own ______ (fill in the blank). So homemade coffee creamer it is!

If you like coconut…I mean real coconut, not just the artificial flavor, you will be a fan. And another thing I love…it’s SO simple!


Ingredients:

  • 1 can coconut milk (Full fat my friends! Do not be afraid!! It’s good for you!)
  • 2 Tbsp maple syrup (go for the good stuff…real maple syrup. It’s more expensive, but it’s better for you and  it tastes a million times better!)
  • 2 tsp vanilla extract

Put all of the above in a sealable jar, close it up and shake baby shake!! It’ll take a couple minutes to get everything good and mixed up. Then seal that puppy up and keep it in the fridge.

Visions of Handstands Dance in Their Heads

Day 1! So excited to get rolling with this lovely lady and her health plan!  As I said in a previous post, Adrienne is not new to health and fitness.  This is an element of her life that she holds important and she has taken huge steps in the past couple of years to make it an even bigger priority.  However, starting a new business took her attention away enough to where she decided she wanted a jump start.  So, we had our initial consultation last Friday, and as you can see…we had some fun 🙂

During a typical consultation I go over health intake forms that I have the client fill out prior to the appointment. I then create a meal plan for them using an awesome program I have through my certification that allows me to input the client’s info so I can gauge what his/her basal metabolic rate is and what calorie level ought to be targeted in order for progress to be made. The best part is I get to customize the plan according to my specific recommendations for them and their needs, along with likes and dislikes.  They receive a shopping list as well and I am able to specify their macro-nutrients in order to be more effective. LOVE. IT.

Adrienne planned to get started the Monday after our consultation. Included in her plan is a workout we’ll be doing together a couple of times a week (she also does hot yoga and I’ll give her an additional “assignment” to do one more day to round out her week of exercise).  I am all for “anywhere workouts” that use just body weight, so that is what we will be focusing on and I am SO excited to get started!

Unfortunately Adrienne has been sick this past week and has not been able to start in on her workouts (so important to give your body the rest it needs when you’re sick!).  HOWEVER…she’s been focusing on the principles surrounding her plan (eating clean, eating regularly, portion control) and has lost 4 pounds in just the first 4 days since she started (and only half-way started!)! So awesome!!!

In addition to all of this, we are busy planning my wedding reception for July. Holy wow…even when you’re doing something low key it’s AMAZING what all is involved in the details! I had a second meeting with Adrienne yesterday to touch base and see where we are at. Josh and I are doing a mix of traditional and very non-traditional at our reception. It’s so fun making it our own and I LOVE that Adrienne is the kind of consultant that lets you lead in terms of how you envision things, but she has all sorts of ideas and resources to support what you want and make it come alive!
