We LOVE the 21 Day Fix program and this is a recipe I found & modified that is 21 Day Fix approved! The 21 Day Fix is all about clean eating, balanced macros and portion control…all things I teach health coaching clients and guidelines we live by.
So here you go…I hope you try it, it really is delicious!
INGREDIENTS (serves 8)
- 5 garlic cloves , minced
- 1 small onion, chopped
- 1/4 cup fresh basil finely chopped
- 2 quarts organic chicken broth
- 2lbs grass fed ground beef (or turkey)
- 14 oz diced tomatoes
- 14 oz tomato sauce
- 2 cups spinach leaves
- 1 package refrigerated cheese tortellini
- 1/4 cup shredded parmesan cheese (for the topping)
Brown the meat in a large skillet. Add onions and garlic in the same skillet and cook until tender. Season with a little italian seasoning, salt and pepper
Add all the ingredients except the tortellini & Parmesan cheese to crock pot Cook on low for 3-4 hours, or all day.
Right before you’re ready to eat, cook the tortellini according to package instructions. Then add to the soup.
Dish soup out and add a sprinkle of Parmesan cheese to the top. Serve hot 🔥1 cup = 1 serving

We were looking for a tasty, healthy recipe and I stumbled upon a 21 day fix friendly taco bake recipe and am happy to report…it’s delish!
Here’s my modified version:
Preheat oven to 350F
- 1 c. Quinoa, cook according to package
- 1 lb. lean ground turkey, or beef (we used grass fed beef)
- 1 cup chopped bell pepper, finely chopped
- 1/4 cup onion, finally chopped
- taco seasoning (1 packet)
- 16 oz crushed tomatoes
- 1 & 1/3 cups shredded cheese
Cook the quinoa & set aside. Brown the meat, adding seasoning per seasoning directions. Add the chopped veggies & tomato sauce to the mixture. Bring to low boil then simmer for a few minutes. Add cooked quinoa & 1 cup of the cheese mix and spread in a 9×13 pan. Top with remaining 1/3 cup of cheese, cover with foil and cook for 20 min. Remove foil and cook another 10 min.
Let cool in pan for several min. before serving.
21 Day Fix containers (1/4 pan = 1 serving)
- 1 yellow
- 1 red
- 1/2 green
- 1 blue
We loved this! Next time we’ll double or triple the recipe and freeze some! Perfect with a salad on the side!
It is definitely the time of year for crockpot food! Mmmmm. Living tiny also is a really good motivator for easy food. However, we’re not willing to compromise our healthy choices or taste! …definitely not taste!
I have been craving some meatloaf for probably a couple of weeks now. It is a little funny to hear myself say that. I was vegetarian several years ago for probably 5 years. I was doing it for “health reasons” or so I thought. I am a big fan of giving my body plenty of protein from animal sources nowadays. Of course clean options are what I go for. I switched over to grassfed beef a couple of years ago and am shocked at how different it tastes!! It is amazing! Plus I feel far better about what I am putting in my body without all the antibiotics and pesticides…
I’m at the end of day 3 of my January 30 day challenge, and part of that means I follow the balanced, portion controlled, clean eating plan provided by the 21 Day Fix. So, here’s a yummy 21 Day Fix approved (& hubby approved) meatloaf recipe!
- 2 lbs grass fed, ground beef
- 2 eggs
- 1 cup old fashioned oats
- 1/2 cup no sugar added tomato sauce
- 3/4 cup Parmesan cheese
- Pinch each of salt & pepper
- 2 tsp onion powder
- 1 tsp garlic powder
- 1 Tbsp dried parsley
- 1 Tbsp mustard
- 2 tsp dried minced onion
- 1 Tbsp Worcestershire sauce
Grease the inside of the crockpot with olive oil or butter.
Combine all ingredients in a large bowl and mix well…using your hands is the best method!
Shape into a loaf…I have a circle crock pot and it worked fine…but I do think an oval shaped cooker would help it cook a little better/faster.
Place loaf into slow cooker, cover & cook on low 5-6 hours: until meat thermometer reads 160F.
If you’d like, at last 15 minutes or so of cooking, add a mixture of a small amount of ketchup/Worcestershire sauce over the top of the loaf.
Let stand 10 minutes before serving.
21 Day Fix Containers per serving:
1 red, 1/4 yellow, 1/4 blue, 1/8 purple.
Delish and great along side a big salad or asparagus!
This is a very simple recipe, doesn’t take a lot of time, but is tasty & satisfying! Don’t you just crave steak every now and again? Mmmmmm! Although simple, there is enough flavor that Salsa is definitely not needed (& this is coming from the salsa queen! I LOVE salsa!).
- 1 lb. lean beef steak
- 1 tsp. chili powder
- 1 tsp. olive oil
- 1 medium onion, chopped
- mushrooms, cut in half
- 1 medium red bell pepper, coarsely chopped
- 2 Tbsp. fresh lime juice
- 2 Tbsp. coarsely chopped fresh cilantro
- Sea salt and ground black pepper, to taste
- Corn tortillas, small
Cover steak with chili powder, salt and pepper. Cook in olive oil over med-high heat 6-8 minutes per side. Cover with foil, set aside.
Put chopped veggies in skillet; cook on medium heat, stirring frequently, for 3 to 5 minutes, or until onion is translucent. Remove from heat.
Slice steak into thin slices. Divide steak and veggie mix evenly on tortillas. Add lime juice and top with cilantro.
Makes 6 steak tacos

1 yellow, 1 red, 1 green
I have to admit I don’t like spending a ton of time in the kitchen! We eat healthy, but we also eat conveniently. Salad with a protein and salsa is pretty typical for me. I don’t like feeling like a devoted half my day to one recipe! Finding the recipe, going to the store and getting all the detailed ingredients, making it and then the CLEAN UP….let’s not even go there :/ Soooo….I was pretty darn happy to make this recipe and then feel like it really wasn’t a huge production. Like…at all. Meaning….I’ll be making this again soon…very soon! As a bonus, it got rave reviews!
4 chicken breasts
1 cup broccoli (fresh or frozen)
Cheese 1/2 cup (we are big pepper jack fans at my house)
Everyday Seasoning (mix from Trader Joe’s. Mrs. Dash would be great too)
Olive oil to grease pan
Preheat oven to 350F
Pound chicken breasts to about 1/2″ if they are not thing enough already. Place them in oiled casserole dish.
Cover each chicken breast with sea salt, pepper and seasonings.
Sprinkle cheese & chopped broccoli on chicken breast.
Fold chicken breasts in half and secure each with a toothpick.
Cover dish with foil and bake for 20-30 minutes, until thoroughly cooked.
*Optional, sprinkle small amount of cheese on top of chicken and return to oven, uncovered 5 minutes.
21 Day Fix= 1 blue, 1/2 green, 1 red per chicken breast
