Coleslaw {keto/paleo/hflc}

So, honestly I am not a fan of coleslaw…unless its homemade and amazing! Maybe that makes me a coleslaw snob? I don’t know. This stuff is really tasty AND I feel good about it because I personally use mayonnaise that is free of inflammatory oils like soybean or canola. The stuff I use is by a company called Primal Kitchen. The mayo is made with super good for you avocado oil! Love this stuff. They make everything from mayo, dressing, whey protein, collagen protein, avocado oil and more. All with ingredients that your body will thank you for eating!

Back to the coleslaw! To make this awesomeness is SUPER easy!

INGREDIENTS:
1 Tbsp Dijon mustard
1/3 cup Mayonnaise
1/4 tsp Black pepper
1 Tbsp natural sugar replacement {erythritol or stevia just adjust amount as needed. for Paleo feel free to use coconut sugar or whatever option you prefer}
1/2 tsp sea salt
1 1/2 Tbsp Apple cider vinegar
1 Tbsp avocado or olive oil
4 cups broccoli slaw or shredded cabbage {I used 2 cups of each!}

DIRECTIONS:
Mix the dressing ingredients {everything except for the broccoli slaw and/or cabbage} together in a small bowl and whisk until well combined.

Place broccoli slaw and/or cabbage in a medium sized bowl. Pour dressing over the veggies and mix until well coated. Enjoy!! Goes nicely with a grass-fed burger topped with avocado in a lettuce wrap! <3
