KETO Snickerdoodle Cookies πŸ’š

I was wondering if these would end up being a recipe that never made it public πŸ™‡πŸ»β€β™€οΈ But I was very pleasantly surprised with the end result! If you love snickerdoodles and you’re sticking to your keto plan through the holidays, these need to be on your baking list!

INGREDIENTS

  • 4 Tbsp grass fed butter {softened}
  • 1 egg
  • 1/2 tsp vanilla
  • 1/2 tsp cream of tartar
  • 1/2 tsp baking soda
  • 4 Tbsp Swerve {or sweetener of choice}
  • 1.5 Cups almond flour

In a separate, small bowl:

  • 2 Tbsp Swerve
  • 1/2 tsp cinnamon

DIRECTIONS

Preheat the oven to 350F.

Mix the 2 Tbsp Swerve & 1/2 tsp cinnamon in a small bowl & set aside.

Mix butter, eggs, vanilla & Swerve together until creamy. Add the remaining ingredients and mix well.

Make small balls with the dough {I use a cookie dough scoop}. Roll each ball in the cinnamon mixture and then place on a greased cookie sheet.

Bake 12-15 minutes until cookies start to turn golden.

Should make about 12 cookies.

Carbs should be 1-2/cookie depending on if you count total or net carbs πŸ’š
