DONUTS – hflc/dairy free/gf

Who DOESN’T love a good donut?? They are probably one of my favorite treats {I don’t like calling things cheating…”cheat meal”, “cheat day”, etc… it’s NOT cheating in my book. It’s treating myself, not feeling an ounce of guilt, thoroughly enjoying it and then moving on, back to my normal, healthy routine!!}. These guys are actually KETO/Paleo friendly & super moist! I used pumpkin spice on mine, but they are delish with cinnamon as well.

INGREDIENTS: {makes 8 donuts or so…depends on your pan!}
{donut batter}
4 eggs, beaten
3/4 cup full fat, canned coconut milk {be sure to get the thick cream in there!}
1/4 cup Swerve or Truvia {sugar alcohol}
1 tsp vanilla extract
1/2 cup coconut flour
1/4 tsp baking soda
1 tsp cinnamon
pinch sea salt

1/4 cup coconut oil to fry donuts in

{donut coating}
2 Tbsp Swerve or Truvia
1 Tbsp pumpkin pie spice {or cinnamon}

DIRECTIONS:

Preheat oven to 350F. Prepare donut pan {I used mini bunt pans and it worked great!} use coconut oil to grease if needed.

Mix eggs and coconut milk well. Add dry ingredients and blend well.

Pour batter into each well for the donuts …if using mini bunt pans just be sure to not cover the center part of the pan.

Bake for 12-15 minutes until donuts just start turning golden around the edges and batter is set.

Prep a bowl or plate with donut coating mixture and have ready.

Remove donuts from the pans & set aside. Heat coconut oil in frying pan. Fry each donut about 2 minutes per side. Immediately set each donut in the coating for just a moment and be sure to flip and coat each side.

I prefer to allow my donuts to cool as they are more “eggy” in taste right out of the oven.
