Pumpkin Coconut Slow Cooker Soup

It is for sure that time of year…pumpkin everything, sweaters, boots, fires in the fireplace, Soup….

This is a yummy {& makes the house smell so good too!} soup whether you are low carb or not!

INGREDIENTS:

  • 1 15oz can pumpkin purée
  • 2 cups organic bone broth or stock {chicken or beef}
  • 15 oz coconut cream {full fat, unsweetened} -if you can’t find coconut cream, buy the full fat canned coconut milk & spoon out the thick cream & reserve the rest for a smoothie!
  • 4 Tbsp grass-fed butter
  • 1 tsp ginger {I use 1 drop of ginger essential oil. Be careful when using essential oils! Make sure it’s of good quality & safe to ingest. Mine is Certified Pure Therapeutic Grade}
  • 1 clove garlic, minced
  • 1 medium onion, finely chopped
  • Sea salt & pepper to taste

Add all ingredients to crock pot & combine well with whisk.

Cover and set to high. Cook 4-6 hours. {OR set to low & cook 6-8 hrs.}
