Keto Lasagna

Ready to try an alternative lasagna NOT made with zucchini??  This one is “legit”, as the kids say.

My mom and I made some keto meals today so I doubled this and left her with one and took the other home with me. Great idea if you want to do a bunch of this kind of stuff up and freeze it for those busy nights!

INGREDIENTS
Meat sauce:
1 pound grass fed ground beef
1 cup uncooked spinach
1/2 cup alfredo sauce {watch the carb content!}

Ricotta mixture:
1/4 cup mozzarella cheese, grated
1/4 cup parmesan, grated
1/4 cup ricotta cheese, full fat
3 Tbsp heavy whipping cream
1/2 tsp Italian seasoning

Cauliflower layers:
1lb riced cauliflower, cooked according to directions
2 eggs
1/2 mozzarella
1/4 cup parmesan, grated
seasonings to taste {sea salt, ground pepper, garlic powder, Italian seasoning}

DIRECTIONS
Meat sauce:

Brown beef in skillet, add alfredo sauce and spinach.

Reduce heat & continue cooking until spinach is wilted. Remove from heat.

Cauliflower layer:

Make riced cauliflower according to instructions on package. Drain excess liquid with cheese cloth or towel.

Mix eggs, mozzarella, grated parmesan & seasonings in large bowl, Mix in cauliflower and spread mixture out like pizza crust {1/4-1/2″ thick} on lined baking sheet {use parchment paper}. Cook about 15 minutes…until golden. Set aside.

Ricotta filling:

Mix ricotta, grated parmesan, heavy whipping cream & seasoning together. Set aside.

Putting it all together!

Heat oven to 375F. Grease an 8×8 baking dish with butter or olive oil.

Cut cauliflower “crust” in half. Fit one layer into the bottom of the pan {you might have to trim the crust}.

Place 1/2 the meat sauce on top of the cauliflower layer {add more alfredo if needed}.

Add 1/2 the ricotta mixture on top of the meat sauce layer & sprinkle 1/4 cup mozzarella.

Place the remaining cauliflower “crust” next and repeat with the meat sauce and ricotta mixture and top it all off with the remaining mozzarella.

Bake 20 minutes until bubbling then broil 3-5 minutes to brown cheese.
