Coconut Cauliflower “Rice”

While truth be told, I haven’t craved much of my old favs since I’ve been keto, such as starchy EVERYTHING… bread… pasta… rice… every once in a while it’s just fun to try something that reminds you of those things.

Today’s try was THIS amazing recipe…and I can promise you, it will be a frequent dish in our house. Oh YUM.

Tonight I was just experimenting, so I didn’t make an entire dinner to go with it. But…next time I’m thinking Chicken and making it some sort of Thai dinner.

Seriously…delicious!

 

INGREDIENTS

  • 1/2 pound “riced” cauliflower {I bought a 1 pound bag from Trader Joe’s. You can absolutely make your own as well by just dumping a head of cauliflower into your food processor & blending until “rice-like”.}
  • 1Tbsp coconut oil
  • 1Tbsp creamed coconut/coconut butter {this is yummy stuff & differs from coconut oil in that the meat of the coconut is still part of the mixture. You can make your own simply by blending unsweetened, shredded coconut in your food processor. I bought mine at Market of Choice}
  • 2/3 cup full fat coconut milk {canned}
  • 1/4 cup unsweetened, shredded coconut
  • Optional: sea salt to taste

 

 

DIRECTIONS

In a med sized saucepan, melt coconut oil then add “riced” cauliflower. Turn to low heat and cook, stirring frequently, 3-5 minutes.

Add remaining ingredients. Cook & stir 5-7 minutes until cauliflower is tender, but not mushy.
