Choconut Bites

These are kind of like a keto almond joy, minus the almonds. And they are tasty! If you are a coconut fan, then this is for YOU! The coconut cream makes them a notch above other coconut treats I’ve tried.


3 cups unsweetened shredded coconut {I get mine at Trader Joe’s}

1/4 cup swerve or erythritol {I don’t like to use this stuff much…but occasionally I will and love the granulated stuff that is more like sugar.}

1 cup coconut cream {buy some or make it just by blending in food processor until it turns into a thick paste-like cream. This takes longer than you might think. So give the processor little breaks and keep going until it breaks down. No other ingredients…just coconut!}

1 Tbsp vanilla extract

1/4 cup coconut oil

{for the chocolate coating}
5oz dark chocolate {72% or higher..the higher the lower in sugar}
1.5 oz coconut oil


Mix first 4 ingredients well. You might want to use your hands to really get it combined better!

Form balls with tsp sized scoops {I love using my cookie dough scoop for this}.  Place balls on parchment paper.
Melt chcocolate & coconut oil in microwave or in a double boiler. Drizzle over coconut.
Place chocolate covered bites in fridge or freezer to set.
