I have to admit I don’t like spending a ton of time in the kitchen! We eat healthy, but we also eat conveniently. Salad with a protein and salsa is pretty typical for me. I don’t like feeling like a devoted half my day to one recipe! Finding the recipe, going to the store and getting all the detailed ingredients, making it and then the CLEAN UP….let’s not even go there :/ Soooo….I was pretty darn happy to make this recipe and then feel like it really wasn’t a huge production. Like…at all. Meaning….I’ll be making this again soon…very soon! As a bonus, it got rave reviews!
4 chicken breasts
1 cup broccoli (fresh or frozen)
Cheese 1/2 cup (we are big pepper jack fans at my house)
Everyday Seasoning (mix from Trader Joe’s. Mrs. Dash would be great too)
Olive oil to grease pan
Preheat oven to 350F
Pound chicken breasts to about 1/2″ if they are not thing enough already. Place them in oiled casserole dish.
Cover each chicken breast with sea salt, pepper and seasonings.
Sprinkle cheese & chopped broccoli on chicken breast.
Fold chicken breasts in half and secure each with a toothpick.
Cover dish with foil and bake for 20-30 minutes, until thoroughly cooked.
*Optional, sprinkle small amount of cheese on top of chicken and return to oven, uncovered 5 minutes.
